I’ve been enjoying Life As Mom and she makes a list of breakfasts, lunches, and dinners without assigning a day. I think I’m going to do that this week.
I have had a huge crop of zucchini thanks to my friend and my grandmother and have made Cinnamon Zucchini Waffles two times in the last two weeks. They’re so good!
Breakfasts (fruit is also served with our breakfasts):
- cinnamon zucchini waffles
- Toad In A Hole
- zucchini bread and scrambled eggs
- cereal and yogurt
Lunches (these are pretty repetitive, as my kids are addicted to cheese and pbjs)
- cheese roll-ups/quesadillas
- peanut butter and jelly
- salads or leftovers for me
Dinners (usually served with salad or veggies)
- broiled chicken thighs
- taco salad with cornbread and fruit
- taco bake with crockpot pinto beans (from the Nourishing Home!) and rice
- grilled chicken
A couple of weeks ago I posted a video of Charles singing one of our meal time prayers. This is something we especially do at breakfast. I find that singing a prayer that we all know helps everyone to focus on the time and to get ready to calm down as we eat (something we’re not always fond of doing!).
